Introduction: Beef Vegetable Soup is a comforting, wholesome dish made with tender chunks of chuck roast and a medley of fresh vegetables. Perfect for the chilly fall and winter months, this hearty soup provides a warm and nutritious meal that your family will love. It pairs wonderfully with crusty baguettes or cornbread with a spread of soft sweet cream butter.
Ingredients:
- 1 lb chuck roast (cut into bite-sized chunks)
- 1 medium onion (diced)
- 2 celery stalks (sliced)
- 2 medium carrots (sliced)
- 3 medium potatoes (peeled and diced)
- 1 can (14.5 oz) diced tomatoes (with juices)
- 1 cup green beans (fresh or frozen)
- 4 cups beef broth
- 1 tsp dried thyme
- 1 tsp dried parsley
- 1 bay leaf
- Salt and pepper to taste
- 2 tbsp olive oil (for browning the beef)
Instructions:
- Brown the beef: Heat the olive oil in a large pot or Dutch oven over medium heat. Add the chuck roast chunks and season with a pinch of salt and pepper. Brown the beef on all sides for about 5-7 minutes. Remove the beef and set it aside.
- Sauté the vegetables: In the same pot, add the diced onion, sliced carrots, and celery. Sauté for about 3-4 minutes until they begin to soften and the onion becomes translucent.
- Add the remaining ingredients:Return the browned beef to the pot. Add the diced potatoes, diced tomatoes with juices, green beans, thyme, parsley, and bay leaf. Pour in the beef broth, stirring to combine.
- Simmer the soup: Bring the soup to a boil over high heat, then reduce the heat to low and let it simmer, uncovered, for about 1.5-2 hours, or until the beef is tender and the vegetables are cooked through. Stir occasionally, and add more broth or water if needed to reach your desired consistency.
- Season and serve: Taste the soup and adjust the seasoning with more salt and pepper if needed. Remove the bay leaf before serving.
- Serve: Ladle the soup into bowls and serve hot with crusty baguettes or cornbread for a complete and satisfying meal.
