My neighbor couldn't stop eating this crunchy snack. It is dangerously good and takes only 3 ingredients to whip up.. Full recipe ๐Ÿ‘‡ ๐Ÿ’ฌ

This slow cooker 3-ingredient mint chocolate muddy buddies recipe was born out of one of those chaotic weeknights when I needed a last-minute snack for a neighborhood game night. I threw it together on a whim, walked it over in two foil trays, and my neighbor literally parked herself next to the snack table and would not stop eating them. They’re dangerously good: crunchy cereal squares coated in pastel green minty chocolate, then dusted in powdered sugar so every bite has that smooth-meets-powdery texture. Everything melts together right in the slow cooker, so you don’t have to babysit a saucepan or turn on the oven—perfect for busy days when you still want something fun and homemade.

Serve these mint chocolate muddy buddies in foil trays or big bowls for parties, movie nights, or holiday gatherings, and set out a scoop or measuring cup so people can help themselves. They pair really well with salty snacks like pretzels, popcorn, or mixed nuts to balance the sweetness, and a big pitcher of iced tea, coffee, or hot cocoa if you’re leaning into the minty vibe. For gifting, let them cool completely, then portion into cellophane bags or small containers and tie with ribbon—they travel well and stay crisp if you keep them in an airtight container.

Slow Cooker 3-Ingredient Mint Chocolate Muddy Buddies

Servings: 10-12

Ingredients

9 cups crispy rice or corn square cereal (such as Chex)

2 cups pastel green mint baking chips or mint-flavored white chocolate chips

2 cups powdered sugar

Directions

Line two medium foil trays or 9x13-inch pans with parchment paper or lightly grease them so the muddy buddies don’t stick. Set aside.

Pour the crispy cereal into a very large mixing bowl (big enough to toss everything without spilling). Set the bowl aside near your slow cooker so it’s ready when the chocolate is melted.

Add the pastel green mint baking chips to the bowl of a slow cooker. Cover with the lid and set to LOW.

Let the mint chips melt for about 45–60 minutes on LOW, stirring every 15 minutes with a heat-safe spatula to help them melt evenly and prevent scorching. They’re ready when completely smooth and glossy.

Once the mint chocolate is melted and smooth, turn off the slow cooker. Working quickly, pour the melted mint chocolate over the bowl of cereal.

Use a large spatula or wooden spoon to gently fold and toss the cereal until every square is evenly coated in the pastel green mint chocolate. Take your time so you don’t crush the cereal too much.

Sprinkle about half of the powdered sugar over the coated cereal and gently toss to start coating. Add the remaining powdered sugar and continue tossing until all the cereal squares are evenly covered in a thick, dusty white layer and no wet chocolate spots remain.

Transfer the mint chocolate muddy buddies into the prepared foil trays, spreading them out into an even layer so they can cool and crisp up. The mix should look like pastel green pieces peeking through a generous dusting of white powdered sugar.

Let the trays sit at room temperature for 30–45 minutes, or until the chocolate is set and the cereal feels dry to the touch. If your kitchen is warm, you can pop the trays into the fridge for 15–20 minutes to speed things up.

Once completely cool and set, gently break apart any large clusters with your hands. Serve the muddy buddies directly from the foil trays, or transfer to airtight containers. Store at room temperature for up to 4–5 days for best crunch.

Variations & Tips

If you can’t find pastel green mint chips, use white chocolate chips plus 1/2 teaspoon peppermint extract and a few drops of green food coloring, adding the extract and color after the chocolate melts in the slow cooker. For extra crunch, stir in 1–2 cups of mini pretzels or roasted nuts along with the cereal before coating with chocolate (this adds ingredients, so keep that in mind if you’re sticking to the strict 3-ingredient version for simplicity). To make it more festive, toss in green and white sprinkles right after you coat the cereal in chocolate, before the powdered sugar. You can also swap crispy rice squares for corn or wheat squares depending on what you have in the pantry. For easier cleanup on a busy night, line your large mixing bowl with a big disposable bag or use a clean paper grocery bag: add the chocolate-coated cereal, pour in the powdered sugar, fold the top, and shake until coated—then just transfer to the foil trays and toss the bag. If you prefer a stronger mint flavor, add a few crushed mint candies on top right before serving for a little extra pop and crunch.
